We were at Cave Spring Winery in Jordan at 11:00 this morning for a tasting of red wines matched with food. A 2007 and 2005 Gamay were served with poached baby pear and blue cheese. The beef tenderloin was served with a 2007 Pinot Noir. A lamb "cottage pie" was matched with a 2006 Cabernet Franc Estate. To top things off, we had a chocolate, almond bark with highly rendered bacon pieces. Sounds strange but it was very tasty with the sweetness of the chocolate and the saltiness of the bacon. This was served with a 2006 Cabernet Franc and a 2002 Cab-Merlot.
